The Bahama Sunrise Breakfast Smoothie
One of the quiet joys of being a charter chef is those early mornings before the day really begins — when the light is golden, the sea is calm, and I’m blending up something bright to wake everyone up. While I love prepping elegant breakfasts and fancy brunch spreads, nothing gets the guests more excited than this golden, punchy smoothie I like to call The Bahama Sunrise
And yes... it’s inspired by that Erewhon smoothie — no, not the Hailey Beiber smoothie but the Turmeric Crush... which IMO is the best one on the tonic bar menu.
But instead of dropping $20 every time I want that tart, juicy, immune-boosting glow, I decided to start making my own version from scratch. And honestly? It tastes just likeeee the real thing — if not better, because it's blended and served with an ocean view (you can pretend).
Here’s what goes in the blender:
1 cup frozen pineapple
1 cup frozen mango
½ cup carrot juice
½ cup water
1 whole orange, peeled
1½ tablespoons turmeric
1 tablespoon fresh ginger
1/4 cup beet juice or pomegranate juice
Once it’s blended into a vibrant, golden swirl of goodness, I pour about ¼ cup of beet or pomegranate juice into the bottom of a large glass. Then, I gently fill it up with the smoothie so you get this stunning two-toned effect — kind of like a tropical sunrise in a cup.
Guests always ask what’s in it — and then ask for the recipe. Some assume it’s a secret menu item, or that it’s only doable with fancy ingredients. But it’s simple, affordable, and packed with anti-inflammatory power, vitamin C, and bold flavor. It’s tart, a little spicy, super refreshing, and it wakes up your whole body in the best way.
Whether you're docked in the Caribbean or just trying to survive a Monday, this smoothie brings the sunshine. Try it once and you’ll never want to go back to store-bought again.
